Start by making a good cake batter, try an "All together chocolate cake" It's quick and yummy.
1 cup of SR Flour
3 large tablespoons of cocoa
1 cup of caster sugar
3 large tablespoons of butter
1/3 cup of milk
2 eggs
Just mix it all together until combined.
The next step is to foil over the cupcake tray, the foil will keep the ice-cream cones standing upright in the oven. Poke holes in the foil and then gently push the cones through.
We had some mixture left over so decided to make a few cupcakes as well. But of course, the best part of Petah is licking the bowl. Let kids be kids I say! You can see that the batter tasted pretty good!
So, after Petah had eaten the remaining batter and had a wash, it was time to make a filling. I love cakes with a filling and this one always tastes great. Just stew some berries with a little sugar, I used strawberry's and raspberry's. When it's cool, make a little plain white icing (Icing sugar and a small amount of water so it makes a paste)
When the cakes are cooked, make sure you prick the side with a fork, this is to let the steam out and your cones will stay fresh and crisp. If you don't let the steam out, they will go soggy - and no-one wants to eat a soggy cone!
Cut a circle out of the top of your cake and pop in some of the berry filling, then put the lid back on.
It's time to get out a piping bag and pipe some nice swirls onto the top, it's looking more and more like an ice-cream now! Then you can decorate with sprinkles, cherries, lollies or whatever you wish. Mine looked pretty good as per the photo below, but if you keep scrolling, you'll see the disaster that followed...
I really REALLY should have kept these secure because 1 bump and *BOOM* Disaster.
How sad is that! Luckily my family isn't overly fussy and they still enjoyed messed up ice-cream cone cupcakes, I was pretty gutted though!
That's how things roll sometimes, homemade is not always perfect!
